Shiitake (Lentinula edodes), also known as the “Emperor’s Mushroom,” is one of the most highly valued mushroom species in the world. Its native habitat is East Asia, where it primarily grows on dead hardwoods such as oak and beech. Shiitake mushrooms have brown caps with lighter spots and are renowned for their distinctive “umami” flavor, making them an essential ingredient in Asian cuisine. Today, they are the second most widely cultivated mushroom in the world—after the common button mushroom.

Shiitake contains numerous important bioactive components:

  • Polysaccharides – mainly the beta-glucan lentinan, one of the most extensively studied mushroom polysaccharides,
  • Eritadenine, a purine alkaloid associated with effects on lipid metabolism,
  • Sterols (e.g., ergosterol, a precursor of vitamin D2),
  • Phenolic compounds and antioxidants, contributing to cellular protection against oxidative stress,
  • Vitamins and minerals, particularly B vitamins, copper, zinc, and selenium.

In China and Japan, Shiitake has been valued for centuries as a mushroom promoting longevity and vitality. Numerous studies confirm that Shiitake combines nutritional richness with functional properties.

Modern Use

Today, Shiitake is enjoyed both in culinary applications and as a dietary supplement.
