The fruiting stage is a critical part of mushroom cultivation, as it determines when and how the first mushrooms can be harvested. This guide provides practical instructions for accelerating fruiting, selecting a suitable environment, and caring for logs or stumps to ensure a successful and high-quality yield.

 

 

How Soon Can We Expect the First Fruits

If the inoculation (application or planting of mycelium) is carried out in spring, the first mushrooms may sometimes appear as early as autumn, when the environmental temperature is lower and air humidity is higher.

Shiitake mushrooms grow more slowly and require a longer period for colonization. They often begin fruiting only after 18 months, and in harder woods (e.g., oak), sometimes not until two years.

Accelerating the Fruiting Stage

Once the log is fully colonized, the development of mushrooms can be accelerated by soaking the logs in cold water for 24 hours. This is especially recommended for Nameko mushrooms and Shiitake. The logs should be weighted during soaking to prevent them from floating to the surface.

If mushrooms begin to grow under the plastic cover, gently poke a few holes, taking care not to damage the mushrooms.

Suitable Spaces and Conditions

For the fruiting stage, the most suitable spaces are humid environments such as cellars, barns, or mines. Key conditions include:

    • Low light levels – just enough to read a book.

    • High air humidity – in indoor spaces, the floor can be watered and logs misted as needed. Spraying directly on the mushrooms is not recommended, as this may cause rot if the water does not evaporate within a few hours.

    • Gentle ventilation – to prevent stagnant air and excessive moisture.

In the garden, fully colonized logs (those with white mycelium evenly distributed under the wax layer) can be partially buried in sand to prevent drying out.

After Fruiting

Between fruiting cycles, logs should rest for at least two months to allow the mycelium to regenerate and prepare for the next growth cycle. Following these steps can help improve both the success rate of fruiting and the quality of the mushrooms.
